If you don’t have variety over time please be at least taking a multivitamin too. It’s not perfect but it helps against nutrient deficiencies
There’s meals that provide a wide range of nutrients probably enough to cover everything. Chicken curry (bell pepper, carrots, chicken breast, rice) could be one I think.
Potatoes and butter is enough.
I guess the nutrient variety could be built into the repeat meals ?
