I’m just throwing random stuff out but are you passing your GPU to the VM? It could be that when you switch to Material Preview there’s no GPU to process it fast enough and it crashes.
Eevee requires a GPU in ways unlike the old default renderer. If it’s virtualized there’s all kinds of things that might be wrong with getting access to a GPU.
@HungryLemon try to reset the program to the standard version. Without addons, resetting the scene.
the same. I removed ~/.config/blender catalog from my Debian. Forgot to tell ya that I uses all of this through QEMU and virt-manager.

Agreed with the other commenter, you need to verify that you have proper GPU access. Eevee will always crash if not given a GPU.
