how to cook plain scrambled JustEgg?

I’ve never cooked scrambled chicken eggs so telling me to do it like that is useless. Their website is terrible (on mobile at least) and search engines don’t work like they used to… I just want to know how long until it’s cooked, if I need to put oil in the pan, and is a spatula really necessary over a spoon? What’s this about flipping and curdling? I’m totally lost here. I’ve scrambled tofu before- is this the same?

    @duckweed @vegan Not much like tofu.

    There is a texture you’re looking for with scrambled JustEgg more than a clearly defined timeframe. It’ll stop being liquid, & be more of a fluffier semi-solid texture. It’s great when most of it has just changed form.

    The spatula is great because it wont damage non-stick cookware, I also find it easier to move things around.

    I put a touch of oil when I’m cooking it, but if you’re using non-stick cookware, you probably don’t have to.

      I’m afraid that non-stick cookware that can be but isn’t damaged still does damage. The forever chemicals hurt both humans and animals in the communities where they are manufactured, employed, and disposed of; and bits of the PFAS do end up in our food.
      Not that anyone asked.

    @duckweed @vegan it’s nearly the same. Never had Just Egg because it’s not yet available in Germany. But we have other substitutes.

    Oil is necessary to provide sticking to the pan. Spatula is recommended to safe the pan from scratches. If you have a good non-stick pan you may need only a little bit oil. If your pan is ‘scratch-resistant’ there’s no need for a spatula.

    If you don’t stir you just get an Omelette.

    It takes 5-7 minutes to cook it entirely.

    I use a small non stick egg pan (about 8 inches across) on medium to medium high heat and with the tiniest little drop of oil. I let it sit until I can pull up the edges without gooing everywhere then flip it and cut it into pieces with the spatula. Continue until desired doneness.

    I usually eat it in a burrito, and toss spinach and tofu into it a minute in.
