I like turkey. It certainly can be cooked in ways where it comes out too dry. I don’t like dry turkey breast very much either. But well-cooked juicy turkey dark meat is my jam, no pun intended. And besides, everybody with even the slightest modicum of common sense and good taste knows that the real treat is turkey sandwiches from the leftovers.
A couple of years ago I tried pre-butchering my turkey and it really works. It’s useful to be able to cook the bird in one to one-and-a-half hours instead of all fucking day, but the main benefit is that you can cook the white meat until it’s 155-160F and the dark meat until it’s 195-200F, and both kinds of meat taste great. When you stuff a bird and cook it whole, you have to get the stuffing inside up to a safe temperature, which means both the white meat and the dark meat have to be turned into shoe leather. Also with pre-butchering you can make stock out of the carcass the night before and it makes the most fantastic gravy.

Cointelpro was a program ran but the CIA for the purpose of surveilling, infiltrating, discrediting, and disrupting subversive political organizations. By subversive they mean leftist basically. They targeted feminist organizations, communist parties, anti vietnam war organizers, Native American groups like AIM, environmentalists, animal rights groups, and anyone involved with the civil rights movment. Many of the tactics used in COINTELPRO are alleged to have seen continued use, including discrediting targets through psychological warfare; smearing individuals and groups using forged documents and by planting false reports in the media; harassment; wrongful imprisonment; illegal violence; and assassination. Beginning in 1969, Black Panther party leaders were targeted by the COINTELPRO and “neutralized” through tactics including assassination, imprisonment, public humiliation, and false criminal charges. Some of the Black Panthers targeted include Fred Hampton, Mark Clark, Assata Shakur, Geronimo Pratt, Mumia Abu-Jamal, and Marshall Conway. Common tactics used by COINTELPRO were perjury, witness harassment, witness intimidation, and withholding of exculpatory evidence.
This is all directly from the wiki and while it covers the basics there is so much more to COINTELPRO. The damage it has done to leftist organizing in America is immense.

Thank god Alton Brown is still cool. My first TV cooking heroes were Brown and Jamie Oliver, and I couldn’t have taken it if both of them had turned into soulless, money-grubbing idiots.
