It’s not meant to mean taking a literal piece of shit. “A shit” in this context means the entire act. Take a break, take a shit, take piss, etc., refer to doing the act.
Or in other words “shit” is a verb here being used a diminutive of the act which is the noun. Like when you take a run, or take a ride, take a walk, or take a hike.
So what do you think happens to all the shit you leave around? Someone’s gotta take it.

Take a break == have a break, but a break isn’t a tangible thing, so this is shorthand for “do the actions required to constitute a break”

Break being almost a non continuation of something. There are two beings involved. And as you point out, you can also perform action consume a break.
Taking a poop is slightly different because one is giving an offering. Although one can consume poop too but I guess it’s a different frame.

That’s the bizarre thing about English. Maybe native English speakers don’t really think about it, but as someone looking at this mess from the outside, I can tell you that it’s really nice when verbs and nouns are distinct.
