Unless you have Celiac disease, seitan (basically pure gluten) is a pretty ideal meat substitute. I absolutely hate how the meat and diary industries have conspired to make gluten look like this evil unhealthy thing that everyone regardless of medical status needs to avoid when it’s been a major source of protein basically since we figured out farming.
Also, lentils. Has both protein and fiber and AFAIK is Celiac friendly. There’s a reason it’s one of the go-to’s in India which has more vegetarians than any other country. Probably a better choice for catering because less people are intolerant to it.
Look, I’m a bro-y guy. I need my protein, ideally 35g per meal. As long as I can have that, then I’m all for a plant based diet.
